Ingredients
- (4) large bell peppers
- (1 pound) Ground Bison
- (1 cup) cooked quinoa
- (1) small onion, diced
- (2) cloves garlic, minced
- (1 cup) diced tomatoes
- (1 tsp) dried oregano
- (1 tsp) dried basil
- Salt and pepper to taste
- Shredded cheese for topping (optional)
Directions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet over medium heat, cook the ground bison until browned. Add the diced onion and minced garlic, and cook until softened.
- Stir in the cooked quinoa, diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
- Spoon the bison mixture into the hollowed-out bell peppers, pressing down gently to fill them.
- Place the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, or until the peppers are tender.
- If desired, remove the foil, sprinkle shredded cheese over the stuffed peppers, and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- Serve hot and enjoy!
