Bison-Stuffed Bell Peppers
Enjoy these hearty Bison-Stuffed Bell Peppers, filled with savory ground bison, quinoa, and flavorful herbs, baked to perfection. A nutritious and satisfying meal for any occasion!


  • (4) large bell peppers
  • (1 pound) Ground Bison
  • (1 cup) cooked quinoa
  • (1) small onion, diced
  • (2) cloves garlic, minced
  • (1 cup) diced tomatoes
  • (1 tsp) dried oregano
  • (1 tsp) dried basil
  • Salt and pepper to taste
  • Shredded cheese for topping (optional)


  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a skillet over medium heat, cook the ground bison until browned. Add the diced onion and minced garlic, and cook until softened.
  3. Stir in the cooked quinoa, diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
  4. Spoon the bison mixture into the hollowed-out bell peppers, pressing down gently to fill them.
  5. Place the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, or until the peppers are tender.
  6. If desired, remove the foil, sprinkle shredded cheese over the stuffed peppers, and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  7. Serve hot and enjoy!
