The Cheesy Zucchini Casserole is a comforting and flavorful dish that combines the natural goodness of zucchini with creamy textures and savory flavors. Sliced zucchini is sautéed with onions and then mixed with a luscious blend of sour cream, mayonnaise, and cheddar cheese.
Ingredients
- (4 (sliced into thin rounds)) Green Zucchini (medium)
- (1 (finely chopped)) Small onion
- (2 cups shredded) 100% A2/A2 Grass-fed Cheddar Cheese
- (1 cup) sour cream
- (1/2 cup) mayonnaise
- (1/4 cup) bread crumbs
- (2 tblsp) 100% A2/A2 Grass-fed Salted Butter Roll
- salt and pepper to taste
Directions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened.
- Add the sliced zucchini to the skillet and cook for a few minutes until they start to soften. Season with salt and pepper.
- In a mixing bowl, combine the sour cream, mayonnaise, and half of the shredded cheese.
- Gently fold in the sautéed zucchini and onion.
- Transfer the mixture to a greased baking dish.
- Top with the remaining shredded cheese and breadcrumbs.
- Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Allow it to cool slightly before serving.
