Chicken and Vegetable Soup with Bone Broth

This recipe not only utilizes the wholesome goodness of our Chicken Bone Broth but also creates a hearty and comforting meal perfect for cold weather or any time you're in need of a nutritious and delicious soup.
Ingredients
- (1 tblsp) 100% A2/A2 Grass-fed Unsalted Butter Roll
- (1) onion (diced)
- (2) carrots (sliced)
- (2) celery stalks (chopped)
- (3) garlic cloves (minced)
- (1 tsp) dried thyme
- (1 tsp) dried rosemary
- Salt and pepper to taste
- (8 cups) Corn & Soy-Free Chicken Bone Broth
- (1 pound (cooked)) Corn & Soy Free Pastured Whole Chicken
- (1 cup) green beans, (trimmed and cut into bite-sized pieces)
- (1 cup) corn kernels (fresh or frozen)
- (1 cup) peas (fresh or frozen)
- (1 cup) cooked quinoa or rice (optional)
- Fresh parsley, chopped, for garnish
Directions
- In a large pot, melt A2 Butter over medium heat. Add diced onions, carrots, and celery. Sauté until vegetables are softened.
- Add minced garlic, dried thyme, dried rosemary, salt, and pepper. Cook for an additional 2 minutes, allowing the flavors to meld.
- Pour in Hidden Camp Farm Chicken Bone Broth, and bring the mixture to a gentle boil.
- Add shredded cooked chicken, green beans, corn, and peas. If desired, add cooked quinoa or rice for extra heartiness.
- Reduce heat to simmer and let the soup cook for about 15-20 minutes, allowing the flavors to meld and vegetables to become tender.
- Adjust seasoning to taste. If the soup is too thick, you can add more bone broth or water.
- Serve the chicken and vegetable soup hot, garnished with fresh chopped parsley.
