For the Crust:
- 1 cup einkorn flour
- 1/4 cup coconut sugar
- 1/2 cup unsalted butter, cold and cubed
For the Lemon Filling:
- 4 large eggs
- 1 cup honey
- 1/2 cup fresh lemon juice
- Zest of 2 lemons
- 1/4 cup einkorn flour
- 1/2 teaspoon baking powder
- A pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, combine the einkorn flour and coconut sugar for the crust. Cut in the cold butter until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish.
- Bake the crust in the preheated oven for about 15 minutes or until it turns golden brown.
- Meanwhile, prepare the lemon filling. In a mixing bowl, whisk together the eggs, honey, fresh lemon juice, lemon zest, einkorn flour, baking powder, and a pinch of salt until well combined.
- Pour the lemon filling over the baked crust and return the dish to the oven. Bake for an additional 20-25 minutes or until the filling is set.
- Allow the bars to cool completely before cutting into squares.
