Ingredients
- (1 (3-4 pounds)) Pork Loin Roast, Boneless
- Salt and black pepper to taste
- (2 tblsp) olive oil
- (4 cloves) garlic, minced
- (1 tblsp) fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- (1 tblsp) fresh thyme, chopped (or 1 teaspoon dried thyme)
- (1 tblsp) fresh sage, chopped (or 1 teaspoon dried sage)
- (1 cup) Corn & Soy-Free Chicken Bone Broth
- (1) sliced onion (optional)
Directions
- Preheat your oven to 350°F (175°C).
- Pat the pork roast dry with paper towels and season generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Once hot, sear the pork roast on all sides until nicely browned, about 3-4 minutes per side.
- Transfer the seared pork roast to a roasting pan or oven-safe dish.
- In the same skillet, add the minced garlic, rosemary, thyme, and sage. Sauté for about 1-2 minutes until fragrant.
- If using, scatter the sliced onion around the pork roast in the roasting pan.
- Pour the chicken or vegetable broth into the skillet with the garlic and herbs, stirring to scrape up any browned bits from the bottom of the pan. Bring to a simmer and cook for another minute.
- Pour the broth mixture over the pork roast in the roasting pan.
- Cover the roasting pan with aluminum foil or a lid.
- Roast in the preheated oven for about 2 to 2 1/2 hours, or until the internal temperature of the pork reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium, measured with a meat thermometer inserted into the thickest part of the roast.
- Once done, remove the pork roast from the oven and let it rest for at least 10 minutes before slicing.
- Slice the pork roast and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple salad.
