Savor this succulent Herb-Roasted Pork: sear, season, and roast with garlic, rosemary, thyme, sage, and broth for a tender, flavorful centerpiece. Perfect with your favorite sides. Enjoy!"

Ingredients

  • (1 (3-4 pounds)) Pork Loin Roast, Boneless
  • Salt and black pepper to taste
  • (2 tblsp) olive oil
  • (4 cloves) garlic, minced
  • (1 tblsp) fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • (1 tblsp) fresh thyme, chopped (or 1 teaspoon dried thyme)
  • (1 tblsp) fresh sage, chopped (or 1 teaspoon dried sage)
  • (1 cup) Corn & Soy-Free Chicken Bone Broth
  • (1) sliced onion (optional)

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Pat the pork roast dry with paper towels and season generously with salt and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Once hot, sear the pork roast on all sides until nicely browned, about 3-4 minutes per side.
  4. Transfer the seared pork roast to a roasting pan or oven-safe dish.
  5. In the same skillet, add the minced garlic, rosemary, thyme, and sage. Sauté for about 1-2 minutes until fragrant.
  6. If using, scatter the sliced onion around the pork roast in the roasting pan.
  7. Pour the chicken or vegetable broth into the skillet with the garlic and herbs, stirring to scrape up any browned bits from the bottom of the pan. Bring to a simmer and cook for another minute.
  8. Pour the broth mixture over the pork roast in the roasting pan.
  9. Cover the roasting pan with aluminum foil or a lid.
  10. Roast in the preheated oven for about 2 to 2 1/2 hours, or until the internal temperature of the pork reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium, measured with a meat thermometer inserted into the thickest part of the roast.
  11. Once done, remove the pork roast from the oven and let it rest for at least 10 minutes before slicing.
  12. Slice the pork roast and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple salad.

Enjoy your delicious and juicy pork roast!
