This jerky is a perfect energy snack or quick breakfast when paired with dried fruits or nuts of choice. Slicing just right will result in perfectly crisp and juicy jerky!
Ingredients
- (1 Lb.) Flank Steak
- (1/4 cup) Coconut aminos
- (2 tbsp) Worcestershire sauce
- (2 tbsp) Amber Maple Syrup - Robust Tin
- (1 tbsp) All-natural liquid smoke
- (1 tbsp) Onion powder
- (1/2 tsp) Ground white pepper
- (1/2 tsp) Fresh ginger (minced)
- (1/4 tsp) Cayenne pepper
Directions
- Slice the steak against the grain into strips about 1/8 inch thick (not paper thin). Slightly frozen meat is a bit easier to slice.
- Place the meat in a container or bag with the remaining ingredients and marinate overnight in the refrigerator.
- Remove the meat from the marinade and place on paper towels to dry. Placing either in a dehydrator set to high or on racks in the oven set on the lowest possible heat setting (150°F to 170°F)
- Start checking the jerky after 3 hours. If it is still too moist, leave it in the oven or dehydrator to finish drying. The ideal texture is like a soft leather. Jerky can be tricky, it may take as little as 3 hours or it may take up to 8 hours to get it to the right dryness.
- After removing it from the oven or dehydrator allow it to cool at room temperature before storing it in the refrigerator. If you refrigerate it while it's still warm, condensation will develop and create unwanted moisture on the jerky, causing it to spoil sooner. It should keep for several weeks when stored in an airtight container.
