- (3 tbsp) tomato paste
- (1 cup) cremini mushrooms
- (1/2 cup) fresh cilantro leaves (finely chopped)
- (2 tsp) ground cumin
- (1 tbsp) fresh ginger (minced)
- (1 tbsp) garlic (minced)
- (1/2 tsp) sea salt
- (1/2 tsp) black pepper (ground)
- (2 pounds) Ground Lamb
Preheat the oven to 450℉. Line a rimmed baking sheet with parchment paper.
Make the meatballs: In a large bawl, mix all of the ingredients except the lamb, then add the lamb and mix just until combined. Do not overmix.
Using your hands, form the mixture into about 20 - 25 golf ball size meatballs and place them on the prepared baking sheet.
Bake for 15 minutes, or until browned. When done, place them on a wire rack set over a rimmed baking sheet.
