- Combine the eggs, coconut flour, and fish sauce in a bowl and mix well
- Melt the bacon fat in a skillet over medium-high heat
- Pour the eggs into the pan and cook for a few minutes until it looks almost done.
- Add the cheese and flip the two sides into the middle and cook for another minute or so. Top with tomato sauce and serve.
NOTE: You can also add some ground beef or other vegetables, before proceeding with step 4 to enhance the flavor.
