Bison meat is known to have higher amounts of micronutrients like vitamin B12, zinc, iron, selenium, and omega-3 fatty acids. Compared to beef, bison has less saturated fatty acids (SFA) and more polyunsaturated fatty acids (PUFA) and omega-3 fatty acids.
Grass-fed bison is quite lean and the last thing you want to do is overcook it. This causes the ground meat to dry out sooner and become more crumbly etc. A general rule of thumb is to aim for 1/3 of the cooking time at 1/3 of the temperature you would normally use for beef, and you'll have yourself a perfect slice of bison to eat. We would also recommend to add some olive oil to the ground meat to make it more moist.
