These big meaty steaks are cut from the shoulder of our pasture and woodlot raised hogs. Each cut consist of great marbled meat and fat surrounding one small bone.
Though it doesn't have quite as high of a protein count (just 20 grams per 3 ounces compared to pork loin's 23 grams per 3 ounces), pork shoulder is another good lean option, especially if you want to cook something like pulled pork or carnitas.
Whether cooking this steak on a skillet or on the grill, it is best to cook it slowly over medium heat. Be sure to flip it a few times to get it nice and crispy on both sides.
